Photos of Edible Greens

Carrots & Carrot Greens

Carrots are one of the best vegetable sources for vitamin A and beta carotenes. Carrot leaves are just as edible as the carrots! Since most people don't eat the greens, commercially grown carrots may include a fair bit of pesticide on the leaves.

But if you grow your own or use organically grown, you can be sure that they are safe to use. And there's every reason to use these nutritious, peppery-tasting greens. Birds love them, and humans enjoy them added to salads (you don't need much!) or dried and used like parsley in soups, stews, and such.

If you've never tried these spicy greens, you are in for a treat! Leave a carrot in the ground over the winter, and the next spring it will put up tall stalks with large, white-flowered dill-like heads. The seeds are spicy and very tasty, a lot like their close relative, caraway.

This site is dedicated to all of those who try to help others on our journey to a better
tomorrow, and especially to Jack Merkens, whose last words to me were "Promise
me you'll keep writing about those canaries! Never stop, ok? Promise!"
Okay, Jack. I promise.
