Peacock Kale

      Producing a much larger plant than the smaller, more common curly kale, peacock kale has much larger, flatter leaves, sometimes with a little frilling at the edges. It's a beautiful plant, with the dark green leaves blushed with rose tones down their veins, and their distinctive bluish 'bloom' (which can be washed off by rain or sprinkling). This kale is mild in flavour even during the summer, and does well lightly picked through the growing season, making it a perfect home gardener's plant.

      Kale is the single most nutritious vegetable on the planet, cold-hardy and resistent to pests and diseases. It grows well even in poor soils, and will winter over with minimal protection in most areas. Unlike other kales, peacock kale resists bolting even in the hottest weather, until fully adult.

      Peacock kale and its taller cousin russian kale sometimes show up in mesclun mixes or as a specialty seed. All kales are edible, no matter what their colour, and all have similarly high nutrient content. Most kales are bitter during the warmer weather but will become sweet and tasty if left to be touched by the first frost.
